Ok.... I picked up a little VV-VI cheap. It winds up if I hold the spring barrel, but if I let it go the barrel spins fast. What am I missing?

Trashed spindle gear ? post pictures how else do you expect a diagnosis ? Spiritualism ?

Your VI has a 2 spring motor, it is likely that one spring is broken and one is not. The unbroken spring winds OK when you hold it but when you include the broken spring, it just spins.
The spring that engages the winding gear is good, the play gear spring is bad.

Bingo!!!!
I just had my first bout with a spring. It had come lose (separated) from the barrel. I took it apart attached it to the barrel and re wound it. IT works!!!
