Does anyone know of a supplier for the bellows material and thin leather used on roller organs?

I don't know a supplier but I believe it's goat leather, which may be helpful in case you didn't already know.
Perhaps a place that does Pianola restorations might be a good place to make enquiries if you don't have luck here.

Try Steve's Piano Service. They have leathers & supplies for player pianos. I got some pieces from them for an 1840s-1850s melodeon (small pump organ) that I was working on; you may find good results there as well. Columbia Organ Leathers is another place supplying to the pipe organ trade. You may find good leather there.

A roller-organ is basically a small reed organ, so it will be similar to fixing up a pump organ. Is it a suction type or pressure type?

It is a vacuum style mechanism.
