It's funny that the 2 DD that I have the best sounding ones area an early pressed label and a paper label I do have to say when they sound good they sound awesome but they just don't seem seem to have the consistent quiet background Even in youtube videos the DD have alot of hiss could be that 78's I have have lived a better life but even my early single sided discs sound quieter for the most part. Like it was said the more pristine the record the better it sounds. The paper-label DD's are supposedly quieter.
My limited experience with the paper-label variety supports this theory... the majority of my DD library are black/etched label.
It is my opinion that the average acoustic Victor record has MUCH less surface noise than a black/etched label DD.
It's a pity that so many of the earlier 'transfer' DDs have not survived in good condition: they were often miles ahead of 78s in sound quality.
