After the ammonia strips off the shellac, do you replace it?
I would imagine the shellac was used as a clear-coat to prevent dulling or tarnishing (does gold tarnish?).

Gold does not tarnish. However the plating is very thin and the coating might help protect it. Will be interested in knowing what others do with respect to recoating.
