Hello,
I recently started a rebuild of this Victor one spring motor from a VV-IV, I took out the two screws the hold the assembly in place, I can't seem to figure out how to remove the shaft.
Any help would be appreciated.

Similar to what I just went through. Your barrel cover is on the opposite side of mine.

This is what I think needs to be done...
Clean the grease off of the collar and you will see the pin that holds it all in place.
Determine the smaller end of the pin and tap it out with a small punch.
Also check for a pin on the collar/spacer of the opposite side of the stanchion.
Once you have freed the pin(s) and removed the shaft from the stanchion, hold the barrel and using a hammer and gently tap on the shaft to push the cover off the barrel.

Update,
I removed the springs, it was pretty simple, I noted that the spring goes counter-clockwise, am I correct?
