Cat chewed my Sonora Elite's crank handle...
...and now it looks like this. What can I do, short of tracking down another complete crank, to fix this? Can just the handle be replaced? (The cat can't be.) If so, how? If not, what are my other options? What would you do?

Try filling and refinishing first.
The cat may not like the new taste.

Try this out, get a small quarter inch drive socket that just fits over the tip of the handel and put some good doubled sided tape on it. Try and put it as centered as possible and spin it slowly with a quarter drive adapter on a drill. Spinning it slowly you should be able to remove most of it and then add some filler and repeat. Remove the socket and sand the tip and stain the handle. I did it to fix a handle that was broken in half and it came out nicely. Or just sand it and hope you don't get a flat spot then fill.
