I just bought a VV-XI in oak in need of some TLC. I'm planning to use Howard's Restor-a-finish to bring back the color and grain. Would the "golden oak" or the "dark oak" color be more appropriate (that is, closer to the original)?

I would use the golden oak on it. When you use Howard's Restore-A-Finish, always use the lighter color. The darker color will darken the finish. The instructions on the container are self explanatory.
