Is there any rhyme or reason to which titles, what dates, certain artists, etc?

Some earlier pressings from European matrices may have the old "Recording Angel" logo on the back. As for later discs, an embossed back was often used in Victor/RCA albums with an odd number of sides: the last disc had the pattern on the back.
There may be other exceptions, as other members may mention.

The embossed back Victors that you commonly find are only for Red Seal issues, it was done as a technical issue to improve the flow of the shellac in the stamper.
The ones with RCA on the back are all from multi disc albums in cases where a piece took up an uneven amount of sides. I think they stopped doing it when automatic changers would get hung up on that side- it was replsaces with a quick spiral groove to shut off the machine, but then by just putting an additional side of music in the set
